I'm not quite sure what you mean by different civilization but this is not limited to the Greek and Roman cultures. There can be the Norse Gods and Mayan and all the cultures that you know of. Go crazy. No limits! And in the rules it will tell you the limit of how many you can have and how you can make your own original one if you would like
